Chocolate Orange Brownies (Paleo, Gluten-free)

A paleo, dairy-free, gluten-free, grain-free fudgy brownie recipe full of festive orange zest and rich chocolate flavors.

  • Preheat oven to 350 degrees F. Grease a 8 x 8 inch pan. (I like using olive oil spray).
  • Add the olive oil and coconut sugar to a large mixing bowl and beat with a hand-held mixer. Add the eggs, vanilla and orange zest to the bowl and beat for about 30 seconds, until everything is well mixed.
  • In a separate bowl, mix the almond flour, tapioca flour, cocoa powder and salt with fork until mixed together. Pour the bowl of dry ingredients into the bowl of wet ingredients and mix with a fork until combined.
  • Fold in the chocolate chips.
  • Pour the batter into the pan and spread evenly.
  • Bake for 20-24 minutes. 22 minutes was perfect for me. The corners of the brownies will have pulled away from the edges a bit, while the center of the brownies will look wet. However, they actually will not be wet if you gently touch them. Wait 10-15 minutes before cutting up the brownies and serving.

Notes

**When it is time to take the brownies out of the oven, they will appear to be wet in the center, but they probably aren't. If you lightly touch the top of the brownies, you'll notice that your finger will still be dry.
**Once you take the brownies out, then let them cool in the pan for 10-15 minutes before cutting them. This makes them easier to cut.
