Gluten-free Cherry Chocolate Oat Granola Bars
Healthy homemade granola bars filled with chia seeds, oats, sunflower seeds, pumpkin seeds, and almonds. They make for a great snack on the go.

Heat the honey, water, vanilla, and almond butter in a saucepan over medium heat until it boils and melts. Then turn off heat and leave in pan.
In a separate bowl, mix together the oats, almond flour, unsweetened coconut, chia seeds, sunflower seeds, pumpkin seeds, crushed almonds and dried cherries.
Pour the honey/almond butter mixture over the oat mixture and mix. Mix in 1/3 cups of the chocolate chips.
Line a 8x8in square pan with wax paper or parchment paper and pour the mixture into it.
Wet your spatula with water and pat down the mixture until it is even and firm in the pan. Top with the other 1/3 cup of the chocolate chips and pat down.
Refrigerate for an hour to overnight.
Lift the hardened granola bars out of the pan by pulling two sides of the wax paper up.
Place them on a hard surface and cut into 12 granola size bars using a very sharp knife. Note: make sure the knife is sharp or else the bars will crumble more when cutting.
