Shredded Brussels Sprouts + Kale Salad with Garlic Caper Dressing

A nutritious Paleo, Grain-free, GF salad made of shredded brussels sprouts, chopped kale, and a creamy Garlic Caper dressing that has a caesar salad vibe.

Ingredients

Garlic Caper Dressing ingredients:

Salad ingredients:

  • 5 cups shaved brussels sprouts ( this was 16 ounces of brussels sprouts shaved in a food processor for me)
  • 6 cups chopped kale ( this was from 6 large leaves of Kale for me)
  • 2 Tbs capers
  • 1/2 cup shredded parmesean ( optional- do not add if keeping the salad Paleo)
  • a dash of bee pollen optional

Instructions

  • Put all of the Garlic Caper Dressing ingredients into a food processor and mix until the dressing is well mixed and creamy. Set aside.
  • Put the shaved brussels sprouts and chopped kale into a large bowl. You can buy shaved brussels sprouts or make your own by mixing brussels sprouts in a food processor. 
  • Add 2 Tbs of capers, 1/2 cup of shredded parmesan (optional), a dash of bee pollen, and all of the Garlic Caper Dressing to the salad and mix. 
  • This salad should serve 4-6 side salads.
