Paleo Apple Chocolate Chip Blondies (GF)

A combination of paleo chocolate chip cookies and baked cinnamon apples. A grain-free, clean treat.

  • Preheat the oven to 350 degrees.
  • Grease a glass pan. (Optional: also line pan with parchment paper)
  • In a large bowl, mix the melted coconut oil and honey together until thick. Add the maple syrup to the bowl and mix. Then, add the vanilla and the egg to the bowl and mix again.
  • In another bowl, mix the almond flour, coconut flour, tapioca flour, baking soda, and salt with a fork.
  • Add the dry ingredients to the bowl of wet ingredients and mix until creamy. Fold in the chocolate chips.
  • Pat the cookie dough down into the pan, making sure the dough is even.
  • Top the dough with the diced apples, and press the apple pieces down into the dough.
  • Bake for 40-45minutes.
