Olive Oil Granola with Almonds and Chia Seeds

A delicious oat, chia seed and almond granola made with maple syrup and olive oil.

  • Preheat the oven to 350 degrees F. Cover a large cookie sheet in aluminum foil.
  • In a large bowl, mix the rolled oats, almond flour, chia seeds, sliced almonds, cinnamon, nutmeg, and sea salt together.
  • In a medium bowl, mix the olive oil, maple syrup, and vanilla together.
  • Pour the liquid mixture into the dry mixture and mix until all of the dry ingredients are wet.
  • Pour the mixture onto a cookie sheet, and make sure it is evenly distributed.
  • Bake for 25 minutes, then mix the granola with a spatula. Add the dried cranberries and mix them into the granola. Bake for another 10 minutes. (Keep an eye on your granola, once it becomes golden brown, it is ready.
  • Let cool.

Notes

  • Instead of maple syrup, you can use honey.
  • Instead of dried cranberries, you can use raisins.
  • You can add other spices that you like, such as cloves, or all spice.
