These Turkey Patty, Potato and Broccoli Rice Bowls have become one of my mid-week go-to meals as of late. I came up with the recipe on a whim, and my husband raved about it so much that I started to make it regularly.

Since this recipe is incredibly filling, flavorful, healthy and easy to make ( it all comes together in about 30 minutes), I figured I would share it with you guys on the blog!

What I love about these These Turkey Patty, Potato and Broccoli Rice Bowls is how well the flavors all go together.

There’s a nice sweetness from the broccoli rice. There’s a hearty comfort food element from the roasted potatoes. And there’s a fantastic almost sausage-like flavor to the turkey patties. It all works together so well.

To make them, you start off by roasting the potatoes. There’s both regular and sweet potatoes here, and they are simply cubed and cooked on a cookie sheet in the oven.

Then while the potatoes cook, you can make the turkey patties and the broccoli rice.

As I mentioned, the turkey patties here taste like sausage patties. I love that because it’s much lighter and less fatty than sausage made with ground pork BUT it has a lot of the same great flavor.

I actually was inspired by the flavor from Texan Erin’s Homemade Paleo Breakfast Sausages. I made her breakfast sausages when I was going my last Whole30 and fell in love with the seasoning she used.

I used a similar seasoning for these turkey patties and they are just SO SO tasty! There’s garlic powder, onion powder, fennel seeds, rubbed sage, pepper, salt, paprika, parsley, and thyme inside.

Once the turkey patties are cooked, you make the broccoli rice.

If you haven’t tried broccoli rice, you should add it to your list of healthy foods to try. It’s basically broccoli chopped up into the size of grains of rice. Sometimes it is just the stem of the broccoli and sometimes it is a mixture of all parts of the broccoli.

It’s really easy to cook. I personally like cooking it in olive oil, and letting the broccoli rice sit and brown in the pan for a few minutes before stirring it.

You can make both the turkey patties and the broccoli rice while the potatoes are cooking. So by the time the potatoes are roasted, you can put the bowls together!

30 minute meals are my go-to with a baby these days. Bonus points for when these meals are Paleo and Whole30, and delicious!

Turkey Patty, Potato and Broccoli Rice Bowls (Paleo, Whole30)

A quick and healthy, naturally Paleo and Whole30, recipe made of broccoli rice, roasted potatoes, and delicious turkey patties that are seasoned to perfection!

Ingredients

  • 2 medium sweet potatoes, , quartered, or cut into small chunks about 3/4 inch thick
  • 3 medium white potatoes, , quartered, or cut into small chunks about 3/4 inch thick
  • 2 lbs ground turkey
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 2 tsp fennel seeds
  • 3 tsp rubbed sage
  • 2 tsp ground black pepper
  • 1.5 tsp salt
  • 1 1/2 tsp paprika
  • 2 tsp dried parsley
  • 1 tsp dried thyme
  • 15- 20 ounces broccoli rice, (I’ve found 10 ounce and 15 ounce bags)

Instructions

Step 1: Cook the potatoes

  • Preheat oven to 415 degrees F. Cover a cookie sheet in aluminum foil and spray with oil. Put cubed sweet and regular potatoes onto the pan. Sprinkle with salt and pepper, and olive oil. Bake for 25-30 minutes, until baked through and a bit crispy. 
  • Make the rest of the recipe while the potatoes bake.

Step 2: Make the turkey patties.

  • Put the ground turkey into a large bowl. Cover the ground turkey in all the seasonings: garlic powder, onion powder, fennel seeds, rubbed sage, black pepper, paprika, parsley, thyme, and salt. Mix well. Make small patties out of the ground turkey mixture, in between ¼ to ½ cups worth of meat. ( There should be about 12-13 patties total). Then put 1 Tbs of olive oil into a large frying pan and heat it over medium-high heat. Cook the turkey patties for 4-5 minutes a side. You will probably have to cook the patties in batches.

Step 3: Cook the broccoli rice.

  • Put 1 Tbs olive oil into a large frying pan and heat over medium-high heat. Cook for 3-5 minutes. I like to leave it for a few minutes, then mix and repeat.

Step 4: Put the bowls together.

  • Add the potatoes and broccoli rice to the bowls. Top with turkey patties.
