How to make gluten-free and dairy-free brownies

(1) Melt the chocolate!

Mix the olive oil and the dairy-free chocolate together in a bowl and melt it together. I like to do this in the microwave. I let it heat for 15 seconds, then stir and repeat until it is melted.

You can also melt the chocolate on the stovetop by creating a double boiler or in a pan.

(2) Mix the coconut sugar and vanilla into the melted chocolate.

(3) Add the eggs. Mix the eggs, one at a time, into the chocolate batter.

(4) Mix the dry ingredients. In a separate bowl, mix the almond flour, baking soda and salt together.

(5) Mix the dry ingredients into the chocolate batter.

(6) Bake.

Recipe tips

  • Make sure to use chocolate chips that you love or that fit into your dietary needs.

For example, HU chocolate is Paleo but Trader Joes semi-sweet isn’t Paleo. However, both are dairy-free.

  • Don’t overbake your olive oil brownies!

If you know your oven runs hot, keep an eye on your brownies early. In general, keep an eye on them at around the 25-30 minute mark. If they over-bake, they wont be fudgy.

Paleo Almond Flour Brownies with Olive Oil (Dairy-free, Gluten-free)

  • Preheat the oven to 325 degrees F. Make sure oven rack is in the upper third of the oven. Line an 8 x 8 inch pan with parchment paper.
  • In a microwave safe bowl, add the olive oil and chocolate chips. Microwave for 15 seconds at a time, stirring well after each time in the microwave. It should take about 1 minute for the chocolate to melt this way. Add the coconut sugar and vanilla to the melted chocolate, and whisk.
  • Let the chocolate mixture cool for a few minutes, and then add one egg and whisk until well mixed. Add the second egg, and whisk. Then add the third egg and whisk. The mixture should thicken by this point.
  • In another bowl, add the flour, baking soda and salt, and mix.
  • Then, pour the flour mixture into the chocolate mixture, and mix well. Pour the brownie mixture into the pan.
  • Bake for 28-32 minutes, or until a tooth pick comes out clean. Cool for 30 minutes before slicing. Serves 16
