I love these banana oat muffins so much! They have a crisp top, and a soft, fluffy, moist inside. They can also be tweaked to have more or less banana flavor, based on your tastes. Oh and they come together quickly!

These muffins are based on a no butter banana bread recipe that I made growing up as a kid. I always loved the texture and taste, so I made a few tweaks and this recipe is the result!

Add some almond butter or peanut butter on top and you have a mouthwatering snack.

I LOVE baking with olive oil. I find that olive oil makes my baked goods lighter and tastier.

And the same is true of these healthy oatmeal muffins. They are made with olive oil (without butter) and they are divine.

Ingredient swaps

When making these dairy free banana muffins, you can make several ingredient swaps.

For the brown sugar: you can use maple sugar instead.

For the almond milk: you can use any non-dairy milk of your choice like cashew milk or oat milk.

For the olive oil: you can use avocado oil, melted coconut oil, or any light tasting oil of your choice.

How to make these banana muffins made with olive oil:

You’ll need 3 bowls to make these banana muffins with no butter.

In bowl 1, you will mix the brown sugar, olive oil, egg whites, egg, and vanilla with a hand held mixer.

In bowl 2, you’ll mix the mashed banana, rolled oats, and almond milk together. And then, pour the banana mixture into the sugar and oil mixture and mix.

In bowl 3, you’ll mix the flour, baking powder, baking soda, salt and cinnamon. Then you’ll pour the flour mixture into the sugar and oil mixture and mix.

Then lastly, you bake! Easy enough!

Tips

  1. Use extra ripe bananas in this recipe. You wont get the right texture or flavor with underripe bananas.

2. If you want extra banana flavor, use 3 bananas in this recipe.

If you want a lighter banana flavor, then use 2 bananas.

Muffin variations:

This recipe is for regular healthy banana oatmeal muffins but you can tweak this recipe if you want to.

Blueberry– you can add some blueberries to this recipe to make blueberry banana oat muffins. I would add about 1 cup of blueberries.

Chocolate chip– you can add some chocolate chips to this recipe to make chocolate chip banana muffins. I would add about 1 cup. Make sure you use dairy-free chocolate chips to keep the recipe dairy-free. I like the ones from Enjoy Life.

Raspberry– don’t think that blueberries are the only berry you can add, raspberries are great here as well! Sometimes I just add a bunch of mixed berries into the batter, delish!

Walnuts or other nuts– you can also add any nut of your choice to the batter.

Cinnamon– add more cinnamon for more cinnamon flavor!

Dairy-free Banana Oatmeal Muffins Made with Olive Oil

Ingredients

  • 1 cup brown sugar
  • 1/2 cup olive oil
  • 2 large egg whites
  • 1 large egg
  • 1 teaspoon vanilla
  • 2-3 ripe bananas, mashed
  • 1 cup rolled oats
  • 1/2 cup almond milk
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  • Preheat oven to 350 degrees F. Grease and line a 12 cup muffin pan.
  • In a large bowl, add the brown sugar, olive oil oil, egg whites, egg, and vanilla and beat with a hand-held mixer at medium speed.
  • In another bowl, mix the mashed banana, oats, and almond milk. Add to the sugar mixture to the bowl and mix with fork.
  • In another bowl, mix the flour, baking powder, baking soda, salt and cinnamon and stir. Add to sugar mixture and mix.
  • Evenly pour the batter into the muffins tins.
  • Bake for 30 minutes, or until a toothpick or knife comes out clean.
