This dutch oven maple peach chicken thighs recipe is a healthy chicken dish made with peaches, carrots, mushrooms, and sweet potatoes. Everything cooks in the most amazing lemon juice and maple syrup sauce. It makes for a wonderful summer dinner!

Normally when I make a recipe with peaches I make a dessert like peach cobbler, but I have found that making savory dishes with peaches is just as delicious! Like in this peach chicken recipe.

I love this dutch oven recipe because it is gourmet and delicious, but incredibly easy to make! The peaches soften and melt into the chicken and into the sauce. It’s a great way to use up any extra peaches you have, so if you have a few lying around, make this recipe!

Recipe ingredients:

Ingredients needed to make peach chicken.
  • Peaches– use fresh ripe peaches for this recipe. They have more flavor when they are ripe.
  • Chicken thighs– any kind will work. With or without skin.
  • Carrots– fresh long carrots work best, but you can also use baby carrots.
  • Lemon juice– freshly squeezed or pre-squeezed.
  • Maple syrup– make sure to use 100% pure maple syrup.
  • Garlic and onion- these give flavor to the dish.
  • Chicken broth– this helps make the sauce.
  • Dried rosemary, thyme, oregano, basil– these herbs season the chicken.
  • Mushrooms– I like using baby bella mushrooms or button mushrooms.
  • Sweet potatoes– these add yummy flavor to the dish.

Additions/ Substitutions

  • Instead of onion, you can use onion powder.
  • Instead of chicken broth, you can use bone broth to add more protein.
  • You can omit the mushrooms if you don’t like them.
  • You can use white potatoes instead of sweet potatoes.

Step 1: Mix the salt, pepper, rosemary, thyme, basil, and oregano in a small bowl.

Step 2: Add the seasoning to the chicken and set aside.

Step 3: Sauté the onion and garlic in the pan.

Step 4: Add the chicken to the pan and cook for several minutes.

Step 5: Flip the chicken and add the mushrooms, carrots, sweet potatoes, peaches, lemon juice, maple syrup and chicken broth to the pan.

Expert tips:

  • This sauce is sweet because of the maple syrup, if you want it to be less sweet, use 1/4 cup of maple syrup.
  • Make sure to put the chicken thighs skin down into the pan to crisp the skin.
  • If you want the sauce to be thicker, you can add tapioca flour the sauce before cooking it. Just mix 1 Tbs of water with 1 Tbs of tapioca flour and add it in.
  • Since this sauce is so delicious, make a side that absorbs sauce well, like rice or potatoes.

Dutch Oven Maple Peach Chicken Thighs

Dutch Oven Maple Peach Chicken Thighs freshly cooked.

Ingredients 

  • 5 cloves garlic, minced
  • 1/2 yellow onion, minced ( or 1.5 teaspoons onion powder)
  • 1 Tablespoon olive oil
  • 1.5- 2 lbs chicken thighs
  • 1.5 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/3 cup lemon juice
  • 1/3 cup maple syrup
  • 2/3 cup chicken stock or broth
  • 2 peaches, diced
  • 1 cup sliced mushrooms
  • 3 carrots, peeled and cut into 1 inch pieces
  • 1 large sweet potato, ( or 3 small), cut into 2 inch pieces

Instructions 

  • In a small bowl, mix the 1.5 teaspoons sea salt flakes, 1/2 teaspoon ground black pepper, 1 teaspoon dried rosemary, 1/2 teaspoon dried thyme, 1/4 teaspoon dried basil, and 1/4 teaspoon dried oregano. Cover the chicken thighs in the seasoning and set aside.
  • Put the minced garlic, yellow onion ( or onion powder), and olive oil into a large dutch oven, and mix. ( I use a 3 quart large cast iron dutch oven, 15 x 4 x 13 inches). Heat over medium heat and sauté for 3-4 minutes.
  • Place the chicken thighs into the dutch oven, skin side down and push them into the garlic and onion. Make sure to pour any of the excess seasoning into the pan. Let the chicken cook for 4-5 minutes.
  • Reduce the heat to low-medium. Using tongs, flip the chicken over. Add the lemon juice, maple syrup, chicken broth/ stock, diced peaches, sliced mushrooms, chopped carrots, and chopped sweet potatoes to the pan. Cook uncovered, while the mixture bubbles, for 5-6 minutes.
  • Then place the lid on top of the dutch oven and cook, covered for 30 minutes.

  1. I made the sauce recipe and turned it into a soup by blitzing it up smooth after the veggies were soft, I loved it but was too sweet for my partner, so this is something I will save to cook when he is away working, I will do the chicken the next time, I just a craving for soup!4 stars

  2. LOVE!  Used large Dutch over with about 2.5# chicken thighs, baby Bella shrooms, and nectarines (2) instead of a peach as my grocer was out.  Next time, I will use whole sweet potato.  I don’t enjoy cooking so I’m always looking for easy recipes-and this one was easy AND wicked GOOD!!!5 stars
